&amp;#039;&amp;#039;&amp;#039;Pallu Basa&amp;#039;&amp;#039;&amp;#039; adalah salah satu olahan pangan khas Sulawesi Selatan selain [[Coto|Coto Makassar]] yang berbahan dasar daging. Pallu Basa biasanya disajikan sehari-hari ataupun saat acara pesta. Umumnya Pallu Basa menggunakan daging sapi dan jerohan sebagai bahan utamanya dan disajikan bersama kelapa sangrai (serundeng). Selain nasi, Pallu Basa biasa dikonsumsi bersama ketupat ataupun lepat ketan. Beberapa orang juga biasanya menambahkan kuning telur pada kuah Pallu Basa.&lt;br /&gt;

* Daging sapi dan jerohan direbus hingga empuk, kemudian angkat dan potong sesuai selera. Simpan kuah kaldu untuk digunakan sebagai bahan utama kuah Pallu Basa&lt;br /&gt;
* Tumis bumbu halus bersamaan dengan serai, lengkuas, gula merah, kayu manis, dan cengkeh&lt;br /&gt;
* Masukkan kuah kaldu kedalam bumbu yang telah ditumis, aduk rata dan masak hingga mendidih&lt;br /&gt;
* Masukkan air asam secukupnya, garam, dan kelapa sangrai. Masak hingga kuah mengental.&lt;br /&gt;
* Sajikan daging yang telah dimasak bersama kuah&lt;br /&gt;
