Bunga jantan lebih banyak dimanfaatkan karena menghasilkan nira manis dengan kadar gula tinggi, sedangkan bunga betina biasanya dimanfaatkan masyarakat sebagai kolang-kaling. Pohon aren yang siap disadap adalah pohon berumur 10–20 tahun karena pada usia tersebut produksi nira optimal, yaitu sekitar 15–20 liter per hari&amp;lt;ref&amp;gt;Fatriani F, Sunardi, Prayudi NSF. 2012. == Proses Membuat Gula Aren ==&lt;br /&gt;
Proses pembuatan gula aren dilakukan melalui beberapa tahapan, yang peranannya dijelaskan sebagai berikut.&lt;br /&gt;

# Sebelum pohon aren di sadap, lalukukan penderasan/pemukulan, pemersihan tandan bunga jantan bertujuan membuka jalur keluarnya nira. Dilanjutkan dengan mengayun-ayunkan dan lakukan penorehan/memotong pada tandan sampai mengeluarkan nira.&lt;br /&gt;
# Tampung nira dengan bumbung selama 8-10 jam.&lt;br /&gt;
# Nira yang dikumpulkan kemudian disaring dan direbus hingga gula mengkristal sehingga terbentuk gula padat atau cair berwarna cokelat keemasan dengan aroma karamel khas.
